There's a German and a Japanese Bluray release of the Extended version, with the Japanese being higher quality, but no US release. The other option to obtain it is the US 4k/UHD releases of Apocalypse - as far as I can tell all the 4k box sets (and the individual 4k/UHD Apocalypse release) seem to have both the Theatrical and Extended version on the 4k disc (but it isn't on the secondary 1080p Bluray that comes with 4k releases, unfortunately)
Even though the difference between the Theatrical and Extended version of Apocalypse is only four minutes it makes a substantial difference for several scenes, so remastering with the more easily available Theatrical edition would reduce the quality of the edit.
